Instructions
- 1. Bring a large pot of salted water to a boil, then reduce to the lowest setting.
- 2. Place a fine mesh strainer over a bowl and coat it with olive oil.
- 3. Crack an egg into the strainer and let the excess egg white drain into the bowl.
- 4. Place the strainer with the egg into the simmering water and allow the egg white to start cooking.
- 5. Gently tip the strainer to let the egg yolk fold over the egg white.
- 6. Stir the water gently to create a whirlpool effect and let the egg poach for 3-4 minutes.
- 7. Repeat with remaining eggs and serve.
