Ingredients

The French Toast

  • 4 large eggs
  • 1 cup milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 8 slices brioche bread
  • 2 tablespoons butter

The Filling

  • 8 ounces cream cheese
  • ½ cup powdered sugar
  • 1 cup fresh raspberries
  • ½ cup chopped Blue Diamond Honey Roasted Almonds

For Serving

  • ½ cup raspberries
  • ¼ cup chopped Blue Diamond Honey Roasted Almonds
  • to taste maple syrup
  • to taste mint sprigs (optional)

Instructions

  1. Whisk together the eggs, milk, sugar, and vanilla.
  2. Preheat a griddle to medium heat and melt 1 tablespoon of butter on it.
  3. Soak 4 slices of bread in the egg mixture and place on the griddle, cooking for 3-4 minutes on each side until golden brown.
  4. Clean the griddle and repeat with the remaining butter and bread slices.
  5. While the French toast is cooking, prepare the cream cheese filling by beating the cream cheese until fluffy, then mixing in the powdered sugar.
  6. Cut the cooked French toast slices in half diagonally.
  7. On each plate, layer one slice of French toast, add 1-2 tablespoons of cream cheese filling, followed by 2 tablespoons of raspberries and 1 tablespoon of almonds.
  8. Top with another slice of French toast and repeat the layering process.
  9. Garnish with remaining raspberries, almonds, and cream cheese filling, and serve with maple syrup.
