Instructions
- 1. Beat the eggs, milk, vanilla extract, and cinnamon together in a small bowl and pour into a shallow bowl.
- 2. Dip the bread slices into the egg mixture, coating each side well.
- 3. Heat a large skillet over medium-high heat, spray with cooking spray, and add the coated bread slices. Cook until both sides are lightly golden brown.
- 4. Spread 1 tablespoon of raspberry jam on one slice of French toast, top with enough brie slices to cover, and place another slice on top to form a sandwich. Return to the pan to heat until the cheese melts, flipping once.
- 5. Serve hot with mixed berries, maple syrup, and a dusting of powdered sugar.
