Ingredients

The French Toast

  • 8 slices bread (brioche, white, or French)
  • 5 large eggs
  • cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 4 tablespoons raspberry jam
  • 4 slices Brie cheese (sliced and rind removed)

Toppings

  • to taste mixed berries
  • to taste maple syrup
  • to taste powdered sugar

Instructions

  1. 1. Beat the eggs, milk, vanilla extract, and cinnamon together in a small bowl and pour into a shallow bowl.
  2. 2. Dip the bread slices into the egg mixture, coating each side well.
  3. 3. Heat a large skillet over medium-high heat, spray with cooking spray, and add the coated bread slices. Cook until both sides are lightly golden brown.
  4. 4. Spread 1 tablespoon of raspberry jam on one slice of French toast, top with enough brie slices to cover, and place another slice on top to form a sandwich. Return to the pan to heat until the cheese melts, flipping once.
  5. 5. Serve hot with mixed berries, maple syrup, and a dusting of powdered sugar.
