Stuffed French Toast

Ingredients

The filling

  • 8 ounces reduced-fat cream cheese
  • 2 tablespoons fruit jam or maple syrup, or honey
  • 1 teaspoon pure vanilla extract
  • a pinch kosher salt
  • ½ cup thinly sliced fresh strawberries
  • cup thinly sliced banana

The French toast

  • 12 slices day-old bread
  • 4 large eggs
  • ¾ cup milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • as needed butter or nonstick spray

For serving

  • as needed pure maple syrup
  • as needed sliced bananas and strawberries
  • as needed whipped cream

Instructions

  1. Preheat the oven to 225°F if you want to keep the French toast warm.
  2. Prepare the cream cheese filling by mixing cream cheese, jam, vanilla, and salt.
  3. Spread the cream cheese mixture on one side of each slice of bread.
  4. Layer sliced strawberries and bananas on top of half the slices and cover with the remaining slices to form sandwiches.
  5. Whisk together eggs, milk, cinnamon, and vanilla in a shallow dish.
  6. Heat a non-stick skillet or griddle over medium-low heat and add butter or nonstick spray.
  7. Dip each sandwich in the egg mixture, ensuring it's well-coated.
  8. Cook the sandwiches for 8 to 10 minutes, flipping halfway, until golden and cooked through.
  9. Serve hot with maple syrup, fresh fruit, and whipped cream.
