Ingredients

The stuffing

  • ½ cup 1% cottage cheese
  • 2 tbsp chia seeds
  • 40 g vanilla protein powder
  • 125 g fresh strawberries, cut in half
  • 1-2 large strawberries, diced

The egg batter

  • 3 pcs eggs
  • cups buttermilk
  • 1 tsp cinnamon
  • ½ tsp vanilla
  • 1 pinch salt

The breading

  • 40 g fresh coconut, grated
  • 60 g sliced almonds
  • ¼ cup old fashion oats

The bread

  • 1 loaf wholesome bread

Instructions

  1. Combine cottage cheese, vanilla protein powder, chia seeds, and 120g strawberries in a food processor and process until smooth. Fold in diced strawberries and set aside.
  2. Cut the bread into 6 thick slices and create a pocket in each slice.
  3. Fill the pockets with the cottage cheese mixture and refrigerate while preparing the batter and breading.
  4. Mix the egg batter ingredients in a shallow dish and whisk until well combined.
  5. Combine the breading ingredients in a separate dish.
  6. Dip the stuffed bread slices in the egg batter for about 45 seconds on each side, then dredge in the breading mixture.
  7. Heat a non-stick pan with a little olive oil and brown the stuffed bread slices for 2-3 minutes on each side.
  8. Serve immediately, topped with fresh strawberries and a drizzle of honey or maple syrup.
