Strawberry Stuffed French Toast

Instructions
- Combine cottage cheese, vanilla protein powder, chia seeds, and 120g strawberries in a food processor and process until smooth. Fold in diced strawberries and set aside.
- Cut the bread into 6 thick slices and create a pocket in each slice.
- Fill the pockets with the cottage cheese mixture and refrigerate while preparing the batter and breading.
- Mix the egg batter ingredients in a shallow dish and whisk until well combined.
- Combine the breading ingredients in a separate dish.
- Dip the stuffed bread slices in the egg batter for about 45 seconds on each side, then dredge in the breading mixture.
- Heat a non-stick pan with a little olive oil and brown the stuffed bread slices for 2-3 minutes on each side.
- Serve immediately, topped with fresh strawberries and a drizzle of honey or maple syrup.
