Stuffed French Toast

Ingredients

  • 4 slices sturdy whole grain bread
  • ½ cup dessert hummus
  • 2 large eggs
  • 1 splash milk
  • to taste sliced bananas
  • to taste sliced strawberries
  • to taste extra peanut butter or maple syrup

Instructions

  1. Assemble the sandwich with bread, dessert hummus or peanut butter, and fruit.
  2. Dip the assembled sandwich into the egg and milk mixture.
  3. Cook on a panini press or griddle until golden brown on both sides.
  4. Serve topped with maple syrup.
