Ingredients

Cookies

  • 1 cup 100% pumpkin puree
  • cup chickpeas
  • ½ cup vanilla yogurt
  • cup dates
  • cup almond butter
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • ½ cup soy protein powder
  • cup oat flour
  • cup granulated sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp cloves
  • ¼ tsp salt

Icing

  • ¼ cup pumpkin spice cookie dough batter
  • 2 Tbsp cashew butter
  • 2 tsp powdered sugar

Instructions

  1. Preheat the oven to 350°F and line two cookie sheet trays with parchment paper.
  2. In a food processor, blend the pumpkin, chickpeas, yogurt, dates, almond butter, apple cider vinegar, and vanilla extract until smooth.
  3. In a large bowl, whisk together the protein powder, oat flour, sweetener, baking powder, baking soda, spices, and salt.
  4. Add the pureed pumpkin mixture to the dry ingredients and stir until combined.
  5. Reserve a heaping ¼ cup of the batter for the icing.
  6. Scoop about 2 tablespoons of dough onto the prepared cookie trays, spacing them about 1 inch apart.
  7. Bake for 14-16 minutes until the edges are firm and the center is springy.
  8. For the icing, mix the reserved cookie dough, cashew butter, and powdered sugar until smooth.
  9. Allow the cookies to cool completely before icing the tops.
