Instructions
- Preheat the oven to 350°F and line two cookie sheet trays with parchment paper.
- In a food processor, blend the pumpkin, chickpeas, yogurt, dates, almond butter, apple cider vinegar, and vanilla extract until smooth.
- In a large bowl, whisk together the protein powder, oat flour, sweetener, baking powder, baking soda, spices, and salt.
- Add the pureed pumpkin mixture to the dry ingredients and stir until combined.
- Reserve a heaping ¼ cup of the batter for the icing.
- Scoop about 2 tablespoons of dough onto the prepared cookie trays, spacing them about 1 inch apart.
- Bake for 14-16 minutes until the edges are firm and the center is springy.
- For the icing, mix the reserved cookie dough, cashew butter, and powdered sugar until smooth.
- Allow the cookies to cool completely before icing the tops.
