Ingredients

The cookie base

  • ½ cup white whole wheat flour
  • ¼ cup all-purpose flour
  • ¼ cup old fashioned rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg

The wet ingredients

  • 6 tablespoons unsalted butter
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon pure vanilla extract

The mix-ins

  • 1 cup dark chocolate chips
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the dry ingredients.
  3. In another bowl, beat the butter and sugars until smooth.
  4. Add the pumpkin, egg, and vanilla to the butter mixture and blend well.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips and walnuts.
  7. Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 11 to 12 minutes until edges are lightly browned.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
