Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In a bowl, whisk together the dry ingredients.
- In another bowl, beat the butter and sugars until smooth.
- Add the pumpkin, egg, and vanilla to the butter mixture and blend well.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chocolate chips and walnuts.
- Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 11 to 12 minutes until edges are lightly browned.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
