Instructions
- Coarsely crush black peppercorns and set aside.
- Dredge flounder fillets in a mixture of flour, freshly ground pepper, and kosher salt.
- Heat vegetable oil in a skillet and cook the fish until golden, about 2 minutes per side.
- Remove the fish and wipe out the skillet. Melt butter with crushed pepper and cook until browned.
- Stir in lemon zest, lemon juice, and remaining salt into the butter sauce.
- Spoon the sauce over the fish and garnish with parsley.
