Ingredients

The fish

  • 24 oz. skinless flounder fillets
  • 2 tsp. black peppercorns
  • ½ tsp. freshly ground pepper
  • tsp. Diamond Crystal kosher salt
  • ¾ tsp. Morton kosher salt

The coating

  • 3 Tbsp. all-purpose flour

The cooking fat

  • 1 Tbsp. vegetable oil
  • 6 Tbsp. unsalted butter

The seasoning and garnish

  • 1 Tbsp. finely grated lemon zest
  • 2 Tbsp. fresh lemon juice
  • to taste finely chopped parsley

Instructions

  1. Coarsely crush black peppercorns and set aside.
  2. Dredge flounder fillets in a mixture of flour, freshly ground pepper, and kosher salt.
  3. Heat vegetable oil in a skillet and cook the fish until golden, about 2 minutes per side.
  4. Remove the fish and wipe out the skillet. Melt butter with crushed pepper and cook until browned.
  5. Stir in lemon zest, lemon juice, and remaining salt into the butter sauce.
  6. Spoon the sauce over the fish and garnish with parsley.
