Ingredients

The crust

  • 1 recipe Flaky Low Carb Pie Crust

The filling

  • ½ pound asparagus
  • 1 cup ham, cubed
  • ¼ cup onion, chopped
  • 1 tablespoon butter
  • 2 cups Gruyere cheese, shredded
  • 5 large eggs
  • 1 cup heavy cream
  • ¼ cup water
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper

Instructions

  1. Prepare the pie crust according to instructions and chill.
  2. Preheat the oven to 375°F.
  3. Peel and trim the asparagus, then slice any remaining pieces.
  4. Chop the onion and dice the ham.
  5. In a medium pan, melt butter and sauté asparagus, onion, and ham until softened.
  6. In a bowl, mix eggs, cream, water, salt, and pepper until frothy.
  7. Layer cheese and ham mixture in the pie crust, then pour custard over it.
  8. Arrange asparagus spears on top and bake for about 40 minutes, until set.
  9. Broil to brown the top if desired, then serve warm or at room temperature.
