Ingredients

The crust

  • 1 recipe Flaky Low Carb Pie Crust

The filling

  • ½ pound asparagus
  • 1 cup ham, cubed
  • ¼ cup onion, chopped
  • 1 tablespoon butter
  • 2 cups Gruyere cheese, shredded
  • 5 large eggs
  • 1 cup heavy cream
  • ¼ cup water
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper

Instructions

  1. Prepare the pie crust according to instructions and chill.
  2. Preheat the oven to 375°F and prepare the asparagus by peeling and trimming.
  3. Chop the onion and ham, and grate the cheese.
  4. In a medium pan, sauté the asparagus, onion, and ham in butter until softened.
  5. In a bowl, mix the eggs, cream, water, salt, and white pepper until frothy.
  6. Layer the cheese and ham mixture in the pie crust, then pour the custard over it.
  7. Arrange the asparagus spears on top and bake for about 30 minutes, then move to the middle rack for an additional 10 minutes.
  8. Broil to brown the top if desired, then serve warm or at room temperature.
