Healthy Cottage Cheese & Spinach Egg Bake

Instructions
- Preheat the oven to 350°F and prepare a 9" x 13" pan with nonstick spray.
- In a large pan, heat olive oil and sauté onions and mushrooms with a pinch of salt for 6-8 minutes until translucent and browned.
- Add spinach to the pan and toss until slightly wilted, then spread the mixture in the bottom of the prepared baking pan.
- In a bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture over the vegetables and sprinkle crumbled feta on top.
- Bake for 30 minutes or until the eggs are set, then let it rest for 15-25 minutes before serving.
