Healthy Cottage Cheese & Spinach Egg Bake

Ingredients

The base

  • 12 large eggs
  • 1.5 cups low-fat cottage cheese

The vegetables

  • 1 small onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 5 cups baby spinach, roughly chopped

The seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The toppings

  • 2 ounces feta cheese, crumbled

The cooking fat

  • 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 350°F and prepare a 9" x 13" pan with nonstick spray.
  2. In a large pan, heat olive oil and sauté onions and mushrooms with a pinch of salt for 6-8 minutes until translucent and browned.
  3. Add spinach to the pan and toss until slightly wilted, then spread the mixture in the bottom of the prepared baking pan.
  4. In a bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, and pepper.
  5. Pour the egg mixture over the vegetables and sprinkle crumbled feta on top.
  6. Bake for 30 minutes or until the eggs are set, then let it rest for 15-25 minutes before serving.
