Cottage Cheese Egg Bake

Ingredients

The base

  • 12 eggs eggs
  • 16 oz cottage cheese
  • 1.5 cups sharp cheddar cheese

The protein

  • 1 lb turkey breakfast sausage

The vegetables

  • ½ sweet onion sweet onion
  • 2 cloves garlic
  • 1 green bell pepper green bell pepper
  • 1 red bell pepper red bell pepper

The seasonings

  • ¼ tsp salt
  • ¼ tsp black pepper

The cooking oil

  • 1 tsp olive oil

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, heat olive oil over medium heat and cook the turkey sausage until fully cooked, about 10 minutes.
  3. Remove the sausage and in the same skillet, sauté the onion, garlic, and bell peppers for 4-5 minutes until softened.
  4. In a large mixing bowl, combine eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend until smooth.
  5. Stir in the cooked sausage and sautéed vegetables until well combined.
  6. Pour the mixture into a greased 9x13 inch casserole dish.
  7. Bake for 40-50 minutes until firm in the center. Cover with foil if the top browns too quickly.
  8. Allow to cool for 10 minutes before slicing.
