Instructions
- Preheat the oven to 350°F.
- In a skillet, heat olive oil over medium heat and cook the turkey sausage until fully cooked, about 10 minutes.
- Remove the sausage and in the same skillet, sauté the onion, garlic, and bell peppers for 4-5 minutes until softened.
- In a large mixing bowl, combine eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend until smooth.
- Stir in the cooked sausage and sautéed vegetables until well combined.
- Pour the mixture into a greased 9x13 inch casserole dish.
- Bake for 40-50 minutes until firm in the center. Cover with foil if the top browns too quickly.
- Allow to cool for 10 minutes before slicing.
