Healthy Cottage Cheese & Spinach Egg Bake

Instructions
- Preheat the oven to 350°F and prepare a baking pan.
- Sauté onions and mushrooms in olive oil with a pinch of salt until translucent.
- Add spinach to the pan and combine until slightly wilted.
- Spread the vegetable mixture in the bottom of the prepared baking pan.
- In a separate bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture over the vegetables and sprinkle feta cheese on top.
- Bake for 30 minutes or until the eggs are set.
- Let it rest for 15-25 minutes before cutting and serving.
