Ingredients

The base

  • 12 eggs eggs
  • 1.5 cups low-fat cottage cheese

The vegetables

  • 1 teaspoon olive oil
  • 1 small onion, chopped (about 1 cup)
  • 8 ounces cremini mushrooms, sliced
  • 5 cups baby spinach, roughly chopped

The seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The topping

  • 2 ounces feta cheese, crumbled

Instructions

  1. Preheat the oven to 350°F and prepare a baking pan.
  2. Sauté onions and mushrooms in olive oil with a pinch of salt until translucent.
  3. Add spinach to the pan and combine until slightly wilted.
  4. Spread the vegetable mixture in the bottom of the prepared baking pan.
  5. In a separate bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, and pepper.
  6. Pour the egg mixture over the vegetables and sprinkle feta cheese on top.
  7. Bake for 30 minutes or until the eggs are set.
  8. Let it rest for 15-25 minutes before cutting and serving.
