Ingredients

The sausage

  • 1 lb raw 99% lean ground turkey breast
  • 1 ½ teaspoons salt, divided
  • 1 teaspoon black pepper, divided
  • ¾ teaspoon ground sage
  • ¾ teaspoon ground thyme
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon crushed red pepper flakes

The vegetables

  • ½ cup finely chopped onion
  • 1 oz can diced green chiles
  • 1 tablespoon seeded and diced jalapeno

The cheese

  • 4 oz 50% reduced fat sharp cheddar cheese, shredded
  • 4 oz shredded 2% mozzarella cheese

The egg mixture

  • 10 raw large eggs
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F and prepare a 9x13 casserole dish with cooking spray.
  2. In a bowl, mix ground turkey with 1 teaspoon salt, ½ teaspoon black pepper, sage, thyme, marjoram, and crushed red pepper.
  3. Cook the seasoned turkey in a skillet until fully cooked, then spread it in the casserole dish.
  4. Sauté onion and jalapeno in the skillet until softened, then add diced green chiles and cook briefly before spreading over the turkey.
  5. Sprinkle the shredded cheeses over the vegetable layer.
  6. In a separate bowl, whisk together eggs, remaining salt, black pepper, chili powder, cumin, and garlic powder.
  7. Pour the egg mixture over the cheese layer in the casserole dish.
  8. Bake for 30 minutes or until a toothpick comes out clean, then cool for 10 minutes before cutting into servings.
