Instructions
- Preheat the oven to 375°F and prepare a 9x13 casserole dish with cooking spray.
- In a bowl, mix ground turkey with 1 teaspoon salt, ½ teaspoon black pepper, sage, thyme, marjoram, and crushed red pepper.
- Cook the seasoned turkey in a skillet until fully cooked, then spread it in the casserole dish.
- Sauté onion and jalapeno in the skillet until softened, then add diced green chiles and cook briefly before spreading over the turkey.
- Sprinkle the shredded cheeses over the vegetable layer.
- In a separate bowl, whisk together eggs, remaining salt, black pepper, chili powder, cumin, and garlic powder.
- Pour the egg mixture over the cheese layer in the casserole dish.
- Bake for 30 minutes or until a toothpick comes out clean, then cool for 10 minutes before cutting into servings.
