Cheesy Chicken Asparagus Casserole

Instructions
- Preheat the oven to 375°F and prepare a baking dish.
- Heat 1 tablespoon of olive oil in a skillet and cook the chicken until browned.
- In the same skillet, heat the remaining olive oil and cook the onion until softened.
- Whisk in the flour and cook until lightly browned, then add the chicken broth and whisk until smooth.
- Stir in the milk, salt, pepper, garlic powder, and thyme, cooking until thickened.
- Remove from heat and mix in the chicken, freekeh or quinoa, asparagus, carrots, and shredded cheese.
- Transfer the mixture to the baking dish and cover with foil.
- Bake covered for 35 minutes, then uncover and stir.
- Continue baking until the freekeh is soft and chicken is cooked through, about 10 more minutes.
- Top with Parmesan cheese and return to the oven until melted.
