Cheesy Chicken Asparagus Casserole

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts
  • 1 small yellow onion
  • ½ cup all purpose flour
  • 2 cups reduced sodium chicken broth
  • cups milk
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 cup uncooked freekeh or quinoa
  • 1 pound asparagus
  • 1 bunch spring carrots
  • ½ cup shredded cheese
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish.
  2. Heat 1 tablespoon of olive oil in a skillet and cook the chicken until browned.
  3. In the same skillet, heat the remaining olive oil and cook the onion until softened.
  4. Whisk in the flour and cook until lightly browned, then add the chicken broth and whisk until smooth.
  5. Stir in the milk, salt, pepper, garlic powder, and thyme, cooking until thickened.
  6. Remove from heat and mix in the chicken, freekeh or quinoa, asparagus, carrots, and shredded cheese.
  7. Transfer the mixture to the baking dish and cover with foil.
  8. Bake covered for 35 minutes, then uncover and stir.
  9. Continue baking until the freekeh is soft and chicken is cooked through, about 10 more minutes.
  10. Top with Parmesan cheese and return to the oven until melted.
