Ingredients

  • 1 lb asparagus, cut into 1 ½-2 inch pieces
  • 2 tbsp butter
  • ½ medium yellow onion, thinly sliced
  • 1 tbsp all-purpose flour
  • ½ tsp fine salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • 1 pinch nutmeg (optional)
  • 1 cup sour cream or plain yogurt
  • 1 ¼ cups shredded Swiss cheese, divided
  • cup crushed crackers

Instructions

  1. Preheat the oven to 400°F and grease a baking dish.
  2. Arrange the asparagus in the dish.
  3. Melt butter in a skillet and sauté the onion until soft.
  4. Stir in flour, salt, pepper, garlic powder, and nutmeg, cooking for an additional minute.
  5. Add sour cream and 1 cup of Swiss cheese, stirring until melted.
  6. Pour the cheese sauce over the asparagus.
  7. Sprinkle with crushed crackers and remaining cheese.
  8. Bake for 15-20 minutes until bubbly and golden brown.
