Asparagus Casserole

Ingredients

Casserole

  • 2 lb Asparagus (trimmed)
  • 2 tbsp Olive oil
  • 4 cloves Garlic (minced)
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper
  • 1 ¼ cup Cheddar cheese (shredded)
  • 1 ¼ cup Mozzarella cheese (shredded)

Topping

  • ¾ cup Hollandaise sauce
  • 2 tbsp Chives (chopped)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. In a large bowl, combine the asparagus with olive oil, garlic, salt, and pepper, and stir to coat.
  3. Layer 1/3 of the asparagus in a small baking dish and top with 1/3 of the cheeses. Repeat for a total of 3 layers.
  4. Bake for about 15 minutes, or until the asparagus is tender.
  5. While the asparagus is baking, prepare the hollandaise sauce.
  6. Drizzle the hollandaise sauce over the casserole and sprinkle with chives before serving.
