Ingredients

The chicken

  • 1.5 lbs chicken breast
  • ½ teaspoon kosher salt
  • 1 teaspoon ground black pepper

The coating

  • 3 large eggs
  • 4 cups cornflakes
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon flakey salt

The frying oil

  • ¼ cup avocado oil or olive oil

Instructions

  1. Tenderize the chicken breast to about ¾ - 1-inch thick.
  2. Season the chicken with salt and pepper.
  3. Whisk the eggs in a bowl.
  4. In another bowl, mix crushed cornflakes, flour, garlic powder, paprika, pepper, and kosher salt.
  5. Dredge the chicken in the egg wash, then coat it with the cornflake mixture.
  6. Heat oil in a skillet over medium/high heat.
  7. Cook each chicken breast for 4-5 minutes on each side until golden brown and the internal temperature reaches 165ºF.
  8. Remove from the pan, season with flakey salt, and let rest for 5 minutes before serving.
