Ingredients

The chicken

  • 1 ¼ pounds chicken tenders or boneless skinless chicken breasts cut into strips

The coating

  • ½ cup milk
  • 2 units eggs
  • 4 cups cornflakes
  • 1 teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • cooking spray
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with foil and cooking spray.
  2. Whisk together the milk and eggs in a bowl.
  3. Pulse the cornflakes, smoked paprika, onion powder, sugar, salt, and pepper in a food processor until coarse crumbs form.
  4. Pour the cornflake mixture onto a plate.
  5. Season the chicken pieces with salt and pepper.
  6. Dip each chicken piece into the milk mixture, then roll in the cornflakes.
  7. Place the coated chicken on the baking sheet in a single layer and spray the tops with cooking spray.
  8. Bake for 15 minutes or until the chicken is cooked through and crispy, then sprinkle with parsley and serve.
