Low Carb Strawberry Mousse

Ingredients

The mousse

  • 1 cup Fage Yogurt 2%
  • ½ cup low carb powdered sugar or your favorite powdered low carb sweetener
  • 1 ¼ ounces freeze-dried strawberries
  • ½ teaspoon vanilla extract
  • ½ teaspoon stevia glycerite or more sweetener to taste
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 2 large pasteurized egg whites

The whipped cream

  • 1 cup heavy cream, whipped stiffly
  • 2 tablespoons low carb powdered sugar or your favorite powdered low carb sweetener

Instructions

  1. Powder the freeze-dried strawberries in a coffee grinder and place them in a bowl.
  2. Add sweetener, lemon juice, vanilla, stevia glycerite, and yogurt to the bowl and set aside.
  3. In a clean bowl, whip the egg whites until glossy and stiff, then set aside.
  4. In another bowl, whip the heavy cream with sweetener until stiff.
  5. Whip the yogurt mixture until the sweetener dissolves, then add ⅓ of the whipped cream and blend.
  6. Fold in half of the remaining whipped cream into the yogurt-strawberry mixture until incorporated.
  7. Fold in the rest of the whipped cream gently.
  8. Finally, fold in the whipped egg whites in thirds until fully combined.
  9. Refrigerate for a firmer texture or serve immediately for a softer texture.
