Instructions
- 1. Whip the chickpea water, cream of tartar, salt, and confectioners sugar in a stand mixer until it triples in volume and holds stiff peaks.
- 2. Melt the dark chocolate and almond milk together in a double boiler or microwave until smooth.
- 3. Gently fold the whipped aquafaba into the melted chocolate mixture in batches.
- 4. Transfer the mousse to serving vessels and refrigerate for at least 2 hours to set.
- 5. Optionally, shave chocolate over the top before serving.
