Vegan Chocolate Mousse

Ingredients

The mousse

  • 200 ml chickpea water
  • ¼ teaspoon cream of tartar
  • ¼ teaspoon salt
  • ¼ cup confectioners sugar
  • 200 g dark chocolate
  • 75 ml almond milk

Optional garnish

  • to taste chocolate for shaving

Instructions

  1. 1. Whip the chickpea water, cream of tartar, salt, and confectioners sugar in a stand mixer until it triples in volume and holds stiff peaks.
  2. 2. Melt the dark chocolate and almond milk together in a double boiler or microwave until smooth.
  3. 3. Gently fold the whipped aquafaba into the melted chocolate mixture in batches.
  4. 4. Transfer the mousse to serving vessels and refrigerate for at least 2 hours to set.
  5. 5. Optionally, shave chocolate over the top before serving.
