Ingredients

  • 12 ounces semi-sweet chocolate chips
  • 1 pound silken tofu
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee granules (optional)

Instructions

  1. Melt the chocolate chips using a double boiler or microwave until smooth.
  2. In a large bowl, combine the silken tofu, vanilla extract, and coffee granules.
  3. Add the melted chocolate to the bowl and mix with an electric mixer until smooth.
  4. Transfer the mousse into 6 small serving bowls and refrigerate for 1 to 2 hours to set.
  5. Serve chilled, optionally garnished with chocolate shavings or fresh berries.
