Instructions
- Melt the chocolate chips using a double boiler or microwave until smooth.
- In a large bowl, combine the silken tofu, vanilla extract, and coffee granules.
- Add the melted chocolate to the bowl and mix with an electric mixer until smooth.
- Transfer the mousse into 6 small serving bowls and refrigerate for 1 to 2 hours to set.
- Serve chilled, optionally garnished with chocolate shavings or fresh berries.
