Ingredients

The cheese base

  • 2 cups plain cashews
  • ½ cup coconut cream (or water)
  • 1 tablespoon maple syrup (or other sweetener)
  • 50 billion dairy-free probiotic capsules

Seasoning

  • ½ teaspoon Herbamare
  • to taste herbs of choice

Instructions

  1. Soak the cashews overnight in enough water to cover, plus two inches.
  2. Strain the cashews and add them to a food processor with coconut cream, maple syrup, and probiotics.
  3. Puree the mixture for about ten minutes until creamy and smooth, scraping the sides as needed.
  4. Transfer the puree to a glass dish and cover with a cloth napkin.
  5. Place the dish on a heating pad set to warm, or in the oven with only the light on.
  6. Ferment the cashew cheese for about 12 hours.
  7. Season with Herbamare and herbs of choice before serving.
