corn, rinsed and drained

okra, fresh or frozen, sliced

green onion, sliced

chicken broth or water

Instructions
- Cut the chicken into bite-size pieces and season with creole spices or salt.
- Heat a saucepan with about 1 tablespoon of oil, add chicken, and sauté for about 5 minutes. Remove and set aside.
- Add onions, garlic, jalapeño, bay leaf, thyme, and paprika to the pan, add 2 tablespoons of oil if needed, and sauté for 2-3 minutes.
- Add tomatoes, cayenne, corn, bell pepper, and the sautéed chicken, cooking for about 5 minutes.
- Stir in okra and green onions, add broth and salt, and cook for about 5 minutes, stirring occasionally.
- Adjust broth and seasonings to taste, then serve with rice and garnish with parsley.
