Creole Chicken Okra

Ingredients

The Chicken

  • 1 pound boneless chicken
  • 1-2 tablespoons Creole seasoning
  • 2-4 tablespoons canola oil

The Creole

  • ½ medium onion, chopped
  • 2 teaspoons garlic, minced
  • ½-1 small jalapeño pepper, finely diced
  • 1 leaf bay leaf
  • 1 tablespoon thyme, fresh
  • 1 teaspoon smoked paprika
  • 2 large tomatoes, chopped
  • ½ teaspoon cayenne pepper
  • 1 can corn, rinsed and drained
  • ½ medium bell pepper, chopped
  • 2 cups okra, fresh or frozen, sliced
  • 2 tablespoons green onion, sliced
  • 2 cups chicken broth or water
  • to taste salt

To Garnish

  • to taste parsley, fresh and minced

Instructions

  1. Cut the chicken into bite-size pieces and season with creole spices or salt.
  2. Heat a saucepan with about 1 tablespoon of oil, add chicken, and sauté for about 5 minutes. Remove and set aside.
  3. Add onions, garlic, jalapeño, bay leaf, thyme, and paprika to the pan, add 2 tablespoons of oil if needed, and sauté for 2-3 minutes.
  4. Add tomatoes, cayenne, corn, bell pepper, and the sautéed chicken, cooking for about 5 minutes.
  5. Stir in okra and green onions, add broth and salt, and cook for about 5 minutes, stirring occasionally.
  6. Adjust broth and seasonings to taste, then serve with rice and garnish with parsley.
