Ingredients

The base

  • ½ unit onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground Italian sausage
  • 4 cups arugula, roughly chopped (or sub spinach)
  • 10 units eggs
  • 1 tbsp grass-fed butter or ghee (or sub coconut oil)
  • 1 cup marinara sauce
  • 1 tbsp oregano

Optional toppings

  • 1 cup parmesan cheese, grated (optional, omit for Whole30)

Instructions

  1. Chop the onion and garlic.
  2. Heat a large skillet over medium heat and add the Italian sausage, breaking it into small bits.
  3. Add the onion and garlic to the skillet and cook until the sausage is browned, about 7-8 minutes.
  4. While the sausage is cooking, chop the arugula and whisk the eggs in a large bowl.
  5. Grease a 9x13 baking dish with butter or ghee and preheat the oven to 375°F.
  6. Once the sausage is cooked, add it to the bowl with the eggs.
  7. Add the arugula, marinara sauce, and oregano to the egg mixture and mix well.
  8. Pour the egg mixture into the baking dish and top with cheese if using.
  9. Bake in the oven for 30 minutes or until the eggs are firm throughout.
