Paleo Breakfast Pizza Casserole

Instructions
- Chop the onion and garlic.
- Heat a large skillet over medium heat and add the Italian sausage, breaking it into small bits.
- Add the onion and garlic to the skillet and cook until the sausage is browned, about 7-8 minutes.
- While the sausage is cooking, chop the arugula and whisk the eggs in a large bowl.
- Grease a 9x13 baking dish with butter or ghee and preheat the oven to 375°F.
- Once the sausage is cooked, add it to the bowl with the eggs.
- Add the arugula, marinara sauce, and oregano to the egg mixture and mix well.
- Pour the egg mixture into the baking dish and top with cheese if using.
- Bake in the oven for 30 minutes or until the eggs are firm throughout.
