Instructions
- Cook the rice noodles according to package instructions, undercooking slightly, then drain and rinse with cold water.
- Slice the beef thinly and marinate with coconut aminos, avocado oil, tapioca starch, salt, and chili pepper flakes.
- Prepare the sauce by whisking together minced garlic, coconut aminos, date paste, rice vinegar, fish sauce, honey, sambal oelek, salt, and ground white pepper.
- Heat avocado oil in a wok over high heat and sear the beef until 80% cooked, then set aside.
- Stir-fry broccolini and green onions in the wok for about 20 seconds, then push to the side and scramble the eggs.
- Add the rice noodles to the wok and let them caramelize for about a minute.
- Add the sauce and beef to the noodles, stir well, and continue cooking until heated through.
- Garnish with chopped cashews and serve immediately.
