Instructions
- Preheat the oven to 425°F.
- Place the spaghetti squash cut side down on a parchment-lined baking sheet and bake until fork tender, about 35-45 minutes.
- Prepare the pickled onions by boiling water and vinegar with garlic, salt, sugar, and whole spices until dissolved, then submerge the sliced onion.
- After the squash is done, scoop out its flesh into a strainer to drain excess liquid, then season with salt and pepper and mix in BBQ sauce.
- Spoon the BBQ spaghetti squash onto a bun, top with pickled onions and arugula, and cover with the bun lid. Serve immediately.
