Ingredients

The tortillas

  • 2 cups fine almond flour
  • cup whole psyllium husks
  • 1 pinch salt
  • 1 cup warm water
  • 1 tablespoon olive oil

The taco meat

  • 1 tablespoon neutral oil
  • 1 pound ground beef
  • to taste salt
  • 2 tablespoons keto taco seasoning
  • ¼ cup water

Suggested toppings (optional)

  • ½ cup freshly grated cheddar cheese
  • 1 small tomato
  • 1 medium avocado
  • ¼ cup shredded lettuce

Instructions

  1. Mix almond flour, psyllium husk, and salt in a large bowl.
  2. Add warm water and olive oil, mixing until a dough forms.
  3. Divide the dough into 8 equal portions and roll each into a ball.
  4. Flatten each ball between two sheets of parchment paper to form tortillas.
  5. Heat oil in a skillet and cook each tortilla for 2-3 minutes on each side until pliable.
  6. In a separate skillet, heat neutral oil and cook ground beef until browned.
  7. Add salt, taco seasoning, and water to the beef, stirring to combine and simmer until thickened.
  8. Fill tortillas with taco meat and top with cheese, tomatoes, avocado, and lettuce as desired.
