Ingredients

The dough

  • 1 ¼ cup Wholesome Yum Blanched Almond Flour
  • 2 tbsp Psyllium husk powder
  • 1 tbsp Unflavored gelatin powder
  • ¼ tsp Sea salt
  • 2 large Eggs (at room temperature)
  • 2 tbsp Warm water

For frying

  • as needed none Oil for frying

Instructions

  1. Combine the almond flour, psyllium husk powder, gelatin powder, and sea salt in a food processor and process until uniform.
  2. Add the eggs and warm water, then process until the dough forms a ball. Adjust with more water if too dry.
  3. Cut the dough into 6 sections and roll each into a ball.
  4. Flatten each ball into a 1/16-inch thick circle using parchment paper or a tortilla press.
  5. Heat a lightly oiled non-stick pan over medium-high heat.
  6. Cook each tortilla for 30-60 seconds per side until brown spots form, being careful not to overcook.
  7. Reheat tortillas in the microwave if they cool down and become stiff.
