Ingredients

The tortillas

  • ½ cup Wholesome Yum Coconut Flour
  • 6 large Eggs
  • cups Milk of choice
  • ¾ tsp Sea salt

Optional ingredients

  • 1 tbsp Unflavored gelatin powder
  • ½ tsp Cumin
  • ½ tsp Paprika

Instructions

  1. Whisk all ingredients together in a large bowl until smooth.
  2. Let the batter sit for a minute to thicken slightly.
  3. If using gelatin, sprinkle it over the batter and whisk to avoid clumping, then add more milk if needed.
  4. Heat a small skillet over medium heat and grease lightly.
  5. Pour ¼ cup of batter into the skillet and tilt to distribute evenly.
  6. Cook covered until edges are golden and bubbles form, about 1-2 minutes.
  7. Flip the tortilla and cook the other side for another 1-2 minutes.
  8. Repeat until all batter is used.
