Ingredients

  • ½ cup coconut flour
  • 3 Tablespoons psyllium husk fiber
  • 1 Tablespoon tapioca flour
  • pinch kosher salt
  • 1 cup non-dairy milk

Instructions

  1. Combine coconut flour, psyllium husk, and salt in a bowl or food processor to eliminate clumps.
  2. Stir in non-dairy milk and knead the mixture into a ball, then cover and let it rest for 10-15 minutes.
  3. Divide the dough into 4 sections and roll each between wax paper to about ⅛-¼ inch thick.
  4. Use a lid to cut circles from the rolled dough to form tortillas.
  5. Heat a nonstick pan and brush with olive oil, then cook each tortilla for 2-3 minutes on each side until golden brown.
