Cassava Flour Tortillas

Instructions
- Combine cassava flour, tapioca starch, and sea salt in a bowl and whisk together.
- Add warm water and melted vegan butter, stirring until the mixture resembles a slightly softer than Play-Doh texture.
- If the dough is too dry, add more water 1 Tbsp at a time; if too sticky, add more cassava flour 1 tsp at a time.
- Shape the dough into a ball and cut it into 6 equal pieces.
- Dust a piece of parchment paper with cassava flour and place a piece of dough in the center, dusting the top with more flour.
- Flatten the dough into a disk and roll it out to about 7 inches in diameter, adding more flour as needed to prevent sticking.
- Heat a skillet over medium-high heat and carefully transfer the rolled tortilla to the skillet.
- Cook for about 30 seconds until bubbles form, then flip and cook for another 30-45 seconds.
- Repeat the process for the remaining pieces of dough.
- Serve warm with desired fillings.
