Homemade Coconut Flour Tortillas

Ingredients

  • ½ cup coconut flour
  • 3 Tablespoons psyllium husk fiber
  • 1 Tablespoon tapioca flour
  • pinch kosher salt
  • 1 cup non-dairy milk

Instructions

  1. Combine coconut flour, psyllium husk fiber, and salt in a bowl or food processor to eliminate clumps.
  2. Stir in the non-dairy milk and knead the mixture into a ball for about 1 minute.
  3. Cover the dough and let it rest for 10 to 15 minutes.
  4. Divide the dough into 4 sections and roll each section out between wax paper until about ⅛ to ¼ inch thick.
  5. Use a small lid to cut circles from the rolled dough.
  6. Heat a nonstick pan over medium-low heat and brush with olive oil.
  7. Cook each tortilla for 2 to 3 minutes on each side until golden brown.
