Ingredients

The tortillas

  • 2 cups all-purpose flour
  • ¾ teaspoon salt
  • ½ teaspoon baking powder
  • 3 tablespoons shortening
  • ¾ cup water

For Cilantro Lime Tortillas

  • 2 tablespoons chopped cilantro
  • 1 small lime zest

Instructions

  1. Whisk together flour, salt, and baking powder in a medium bowl.
  2. Add shortening and mix until the mixture resembles coarse crumbs.
  3. Make a well in the center and add water (and cilantro and lime zest if making flavored tortillas).
  4. Mix until a dough starts to form.
  5. Knead the dough on a floured surface for 3-4 minutes until smooth.
  6. Cover the dough and let it rest for 30 minutes.
  7. Divide the dough into quarters, then each quarter into thirds to make 12 portions.
  8. Roll out each portion into a circle about 6-7 inches in diameter.
  9. Cook the tortillas in a heated skillet for about 2 minutes until puffed and lightly browned, flipping to cook the other side.
  10. Keep cooked tortillas warm under a towel while finishing the rest.
