Homemade Flour Tortillas

For Cilantro Lime Tortillas

chopped cilantro

Instructions
- Whisk together flour, salt, and baking powder in a medium bowl.
- Add shortening and mix until the mixture resembles coarse crumbs.
- Make a well in the center and add water (and cilantro and lime zest if making flavored tortillas).
- Mix until a dough starts to form.
- Knead the dough on a floured surface for 3-4 minutes until smooth.
- Cover the dough and let it rest for 30 minutes.
- Divide the dough into quarters, then each quarter into thirds to make 12 portions.
- Roll out each portion into a circle about 6-7 inches in diameter.
- Cook the tortillas in a heated skillet for about 2 minutes until puffed and lightly browned, flipping to cook the other side.
- Keep cooked tortillas warm under a towel while finishing the rest.
