Ingredients

  • 1 cup masa harina
  • cups all-purpose flour
  • 5 tablespoons extra-virgin olive oil
  • ¾ teaspoon sea salt
  • ¾ cup very warm water
  • 2 tablespoons very warm water

Instructions

  1. Whisk together the masa harina and all-purpose flour in a large bowl.
  2. Add the olive oil and mix until fully incorporated.
  3. Dissolve the sea salt in the warm water and pour ⅔ cup over the flour mixture, mixing with a fork to create a clumpy dough.
  4. Add the remaining warm water and mix until combined.
  5. Knead the dough on a lightly floured surface until smooth and medium-stiff.
  6. Divide the dough into 8 or 12 portions, roll into balls, cover with plastic wrap, and let rest for 30 minutes.
  7. Preheat a cast-iron skillet over medium heat.
  8. Flatten each dough ball using a tortilla press or a rolling pin between parchment paper.
  9. Cook each tortilla in the skillet for 30 to 45 seconds on each side until lightly browned.
  10. Wrap cooked tortillas in a kitchen towel to keep warm while cooking the remaining dough.
