Homemade Tortillas

Instructions
- Whisk together the masa harina and all-purpose flour in a large bowl.
- Add the olive oil and mix until fully incorporated.
- Dissolve the sea salt in the warm water and pour ⅔ cup over the flour mixture, mixing with a fork to create a clumpy dough.
- Add the remaining warm water and mix until combined.
- Knead the dough on a lightly floured surface until smooth and medium-stiff.
- Divide the dough into 8 or 12 portions, roll into balls, cover with plastic wrap, and let rest for 30 minutes.
- Preheat a cast-iron skillet over medium heat.
- Flatten each dough ball using a tortilla press or a rolling pin between parchment paper.
- Cook each tortilla in the skillet for 30 to 45 seconds on each side until lightly browned.
- Wrap cooked tortillas in a kitchen towel to keep warm while cooking the remaining dough.
