Ingredients

  • cups cassava flour

  • ¼ cup avocado oil or olive oil
  • ¾ cup warm water, divided

Instructions

  1. Combine cassava flour, garlic powder, and salt in a bowl and whisk together.
  2. Make a well in the center and add oil and ½ cup warm water, stirring until a dough forms.
  3. If the dough is dry, add more water gradually until the texture is firm and springy.
  4. Cover the bowl with a towel and let the dough rest for 5 minutes.
  5. Divide the dough into 12 portions for taco-size or 6 for burrito-size tortillas.
  6. Flatten each portion using a tortilla press or rolling pin between parchment paper.
  7. Cook the tortillas in a hot skillet for 1 minute on each side until they puff and are lightly browned.
  8. Transfer to a plate, cover with a towel, and serve warm.
