Ingredients

The batter

  • 2 tablespoons coconut flour
  • 4 large eggs
  • 1 tablespoon coconut oil, melted
  • ½ cup water

For cooking

  • 2 tablespoons coconut oil

Instructions

  1. Pulse together coconut flour and eggs in a food processor.
  2. Add melted coconut oil and water, then pulse until combined.
  3. Heat 1 teaspoon of coconut oil in an 8-inch frying pan over medium-low heat.
  4. Scoop ¼ cup of batter onto the skillet and spread it to the edges.
  5. Cook until small bubbles form and burst, then flip and cook the other side for 4-5 minutes.
  6. Transfer the crepe to a plate and repeat with remaining oil and batter.
