Ingredients

  • 3 tablespoon coconut flour
  • 1 cup all purpose flour
  • 3 tablespoon all purpose flour
  • 1 ¼ cup milk of choice
  • 1-2 tablespoon powdered sugar (optional)

Instructions

  1. Whisk together the coconut flour and all purpose flour until combined.
  2. Add the milk and whisk until a smooth batter forms. If using, add the powdered sugar towards the end.
  3. Coat a large non-stick pan with oil and heat over medium.
  4. Pour a scant ¼ cup of the batter into the pan and swirl to spread it evenly.
  5. Cook for 2-3 minutes until the edges are slightly golden, then flip and cook for another 2 minutes.
  6. Repeat the process until all batter is used up.
  7. Serve immediately with your favorite fillings.
