Instructions
- Blend eggs, cream cheese, Parmesan cheese, and erythritol until combined.
- Add coconut flour and xanthan gum to the blender and mix until thick.
- Let the batter sit for a few minutes.
- Heat a non-stick pan over medium heat and brush with melted butter.
- Pour batter into the pan and tilt to spread it into a circle.
- Cook until the top is dull and edges brown, then flip and cook briefly on the other side.
- Remove the crepe and repeat the process, stacking the cooked crepes.
