Ingredients

The crepe batter

  • 6 ounces cream cheese
  • 6 large eggs
  • cup grated Parmesan or Asiago cheese
  • 1 ½ tablespoons coconut flour
  • 1 teaspoon erythritol (optional)
  • teaspoon xanthan gum

For cooking

  • 1 tablespoon melted butter or ghee

Instructions

  1. Blend eggs, cream cheese, Parmesan cheese, and erythritol until combined.
  2. Add coconut flour and xanthan gum to the blender and mix until thick.
  3. Let the batter sit for a few minutes.
  4. Heat a non-stick pan over medium heat and brush with melted butter.
  5. Pour batter into the pan and tilt to spread it into a circle.
  6. Cook until the top is dull and edges brown, then flip and cook briefly on the other side.
  7. Remove the crepe and repeat the process, stacking the cooked crepes.
