Paleo Crepes

The batter

Instructions
- Pulse together coconut flour and eggs in a food processor.
- Add melted coconut oil and water, then pulse until combined.
- Heat 1 teaspoon of coconut oil in an 8-inch frying pan over medium-low heat.
- Scoop ¼ cup of batter onto the skillet and spread it to the edges.
- Cook until small bubbles form and burst, then flip and cook the other side for 4-5 minutes.
- Transfer the crepe to a plate and repeat with remaining oil and batter.
- Serve the crepes.
