Ingredients

The crepes

  • 6 ounces cream cheese
  • 6 large eggs
  • cup grated Parmesan or Asiago cheese
  • tablespoon coconut flour
  • 1 teaspoon erythritol (optional)
  • teaspoon xanthan gum

For cooking

  • 1 tablespoon melted butter or ghee

Instructions

  1. Blend the eggs, cream cheese, Parmesan cheese, and erythritol until combined.
  2. Sprinkle the coconut flour and xanthan gum into the mixture and blend until thick.
  3. Let the batter sit for a few minutes.
  4. Heat a non-stick pan over medium heat and brush with melted butter.
  5. Pour batter into the center of the pan and tilt to spread into a circle.
  6. Cook for about 1½ minutes until the edges brown and the top looks set.
  7. Gently flip the crepe and cook for another 15-20 seconds.
  8. Remove the crepe to a plate and repeat with the remaining batter.
