Keto Crepes (Coconut Flour)

For cooking

melted butter or ghee
Instructions
- Blend the eggs, cream cheese, Parmesan cheese, and erythritol until combined.
- Sprinkle the coconut flour and xanthan gum into the mixture and blend until thick.
- Let the batter sit for a few minutes.
- Heat a non-stick pan over medium heat and brush with melted butter.
- Pour batter into the center of the pan and tilt to spread into a circle.
- Cook for about 1½ minutes until the edges brown and the top looks set.
- Gently flip the crepe and cook for another 15-20 seconds.
- Remove the crepe to a plate and repeat with the remaining batter.
