Philly Cheesesteak Stuffed Peppers

The peppers

green bell peppers
Instructions
- Cut the tops off the peppers and remove the seeds and pith.
- Place the peppers in a microwave-safe dish, cover, and microwave for 3-4 minutes.
- Preheat the oven to 350°F.
- Heat oil in a pan over medium heat, add mushrooms, and cook for 2-3 minutes.
- Add onions to the mushrooms and cook until translucent.
- Remove the mushroom mixture from the pan and set aside.
- Add ground beef to the pan, breaking it up while cooking until browned.
- Stir in the mushroom mixture and season with salt and pepper.
- Lightly season the inside of the peppers with salt and pepper.
- Place a slice of cheese in the bottom of each pepper and fill with the beef mixture.
- Bake the stuffed peppers for 20 minutes.
- Top with remaining cheese and broil until melted and browned.
