Philly Cheesesteak Stuffed Peppers

Ingredients

The filling

  • 1 pound 85% lean ground beef
  • 8 oz sliced button mushrooms
  • ½ cup chopped onions
  • 1 tablespoon olive oil
  • 8 slices Provolone cheese
  • to taste salt
  • to taste pepper

The peppers

  • 4 medium green bell peppers

Instructions

  1. Cut the tops off the peppers and remove the seeds and pith.
  2. Place the peppers in a microwave-safe dish, cover, and microwave for 3-4 minutes.
  3. Preheat the oven to 350°F.
  4. Heat oil in a pan over medium heat, add mushrooms, and cook for 2-3 minutes.
  5. Add onions to the mushrooms and cook until translucent.
  6. Remove the mushroom mixture from the pan and set aside.
  7. Add ground beef to the pan, breaking it up while cooking until browned.
  8. Stir in the mushroom mixture and season with salt and pepper.
  9. Lightly season the inside of the peppers with salt and pepper.
  10. Place a slice of cheese in the bottom of each pepper and fill with the beef mixture.
  11. Bake the stuffed peppers for 20 minutes.
  12. Top with remaining cheese and broil until melted and browned.
