Philly Cheesesteak Stuffed Peppers

The peppers

green bell peppers
Instructions
- Cut the tops off the peppers and remove the seeds and pith.
- Microwave the peppers for 3-4 minutes in a covered dish to soften.
- Preheat the oven to 350°F and prepare a pan with olive oil.
- Sauté the mushrooms for 2-3 minutes, then add onions until translucent.
- Brown the ground beef in the same pan and mix in the mushroom and onion mixture.
- Season the beef mixture with salt and pepper.
- Place a slice of cheese at the bottom of each pepper, fill with the beef mixture, and top with another slice of cheese.
- Bake the stuffed peppers for 20 minutes, then broil to melt and brown the cheese.
