Ingredients

The filling

  • 1 pound 85% lean ground beef
  • 8 oz sliced button mushrooms
  • ½ cup chopped onions
  • 1 tablespoon olive oil
  • 8 slices Provolone cheese
  • to taste salt
  • to taste pepper

The peppers

  • 4 medium green bell peppers

Instructions

  1. Cut the tops off the peppers and remove the seeds and pith.
  2. Microwave the peppers for 3-4 minutes in a covered dish to soften.
  3. Preheat the oven to 350°F and prepare a pan with olive oil.
  4. Sauté the mushrooms for 2-3 minutes, then add onions until translucent.
  5. Brown the ground beef in the same pan and mix in the mushroom and onion mixture.
  6. Season the beef mixture with salt and pepper.
  7. Place a slice of cheese at the bottom of each pepper, fill with the beef mixture, and top with another slice of cheese.
  8. Bake the stuffed peppers for 20 minutes, then broil to melt and brown the cheese.
