Ingredients

The filling

  • 1 lb top sirloin steak
  • to taste salt & pepper
  • 2 cups thinly sliced mushrooms
  • 1 cup red onion, sliced
  • 1 medium red pepper, julienned
  • ¼ cup mayonnaise
  • 1 tablespoon dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ cup shredded mozzarella cheese

The peppers

  • 4 medium green bell peppers, halved and seeded

For garnish

  • to taste chopped parsley

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a baking dish with the halved green bell peppers, cut side up.
  3. Season the top sirloin steak with salt and pepper.
  4. Heat a skillet over high heat, spray with cooking spray, and sear the steak for 2-3 minutes on each side.
  5. Remove the steak and let it rest, then spray the skillet again and sauté the mushrooms until browned.
  6. Add the sliced peppers and onions to the skillet and sauté until tender.
  7. In a large bowl, combine the sliced steak, sautéed vegetables, mayonnaise, dijon mustard, garlic powder, black pepper, and mozzarella cheese, mixing well.
  8. Stuff the bell pepper halves with the steak mixture.
  9. Bake for 30 minutes in the preheated oven.
  10. Garnish with chopped parsley before serving.
