Instructions
- Heat 1 tablespoon of olive oil in a skillet and sauté sliced onions until lightly browned.
- Sprinkle onions with salt, lower heat, and stir occasionally until golden brown and sweet.
- In another skillet, heat the remaining olive oil and sauté mushrooms and bell peppers until mushrooms release juices.
- Add soy sauce and oregano to the mushroom mixture, then sprinkle with flour and stir to thicken.
- Melt provolone cheese over the mushroom mixture by covering the pan.
- Assemble the cheesesteak by placing the mushroom mixture on toasted sub rolls and topping with caramelized onions.
