Vegetarian Mushroom Philly Cheesesteak

Ingredients

  • 2 tablespoons olive oil
  • 2 large onions
  • ½ teaspoon salt
  • 16 ounces baby bella or white mushrooms
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon all-purpose flour
  • 1 teaspoon dry oregano
  • 4 6" sub rolls
  • 4 slices provolone cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet and sauté sliced onions until lightly browned.
  2. Sprinkle onions with salt, lower heat, and stir occasionally until golden brown and sweet.
  3. In another skillet, heat the remaining olive oil and sauté mushrooms and bell peppers until mushrooms release juices.
  4. Add soy sauce and oregano to the mushroom mixture, then sprinkle with flour and stir to thicken.
  5. Melt provolone cheese over the mushroom mixture by covering the pan.
  6. Assemble the cheesesteak by placing the mushroom mixture on toasted sub rolls and topping with caramelized onions.
