Ingredients

The filling

  • 1 teaspoon fresh chopped garlic
  • 4 pieces Portobello mushrooms, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 1 small sweet or yellow onion, thinly sliced
  • 1 tablespoon fresh chopped parsley
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons brown rice flour
  • ½ cup veggie broth

The bread and cheese

  • 6 pieces hot dog buns or sub sandwich rolls
  • 6 slices dairy free cheese

For cooking

  • Your favorite amount oil for sautéing or veggie broth if not using oil

Instructions

  1. Sauté garlic in a pan using oil or broth until lightly browned.
  2. Add veggies and cook covered until mushrooms release some liquid.
  3. Remove cover and add parsley, salt, and pepper, mixing well.
  4. Add flour and veggie broth, continuing to cook until the juice thickens.
  5. Remove from heat and serve in buns topped with a slice of cheese.
  6. Drizzle on cheese sauce if desired for extra creaminess.
