Ingredients

The brownies

  • ¼ cup coconut flour
  • ½ cup cacao powder
  • 2 units flax eggs
  • 2 tablespoons ground flax
  • 6 tablespoons water
  • ½ cup coconut oil, melted
  • ½ cup dairy free chocolate chips
  • ½ cup maple syrup
  • 2 teaspoons vanilla extract
  • ½ teaspoon sea salt

The topping

  • 1 ¼ cups dates, pitted
  • ¼ cup almond butter
  • 1 cup shredded unsweetened coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking dish with parchment paper.
  3. Prepare the flax eggs and set aside.
  4. Melt the chocolate chips and coconut oil together in the microwave or on the stove.
  5. Mix the melted chocolate mixture with maple syrup and flax eggs until smooth.
  6. Add coconut flour, cacao powder, and sea salt, stirring until there are no clumps.
  7. Transfer the brownie mixture to the prepared baking dish.
  8. Bake for 20 minutes, then cool.
  9. For the topping, blend dates and almond butter until somewhat smooth.
  10. Add coconut and pecans to the blended mixture and stir well.
  11. Spread the topping over the cooled brownies and cut into squares.
