Ingredients

The filling

  • 1 cup cooked rice
  • ½ tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic salt or garlic powder
  • 1-2 cups cooked, shredded chicken
  • 1 can black beans
  • 1 piece green onion
  • ½ piece red or green bell pepper
  • ¼ cup fresh cilantro
  • 1 tablespoon lime juice
  • 2 cups shredded cheese
  • 6 pieces burrito-sized flour tortillas

Optional toppings

  • to taste sour cream
  • to taste salsa

Instructions

  1. Combine rice, chili powder, cumin, and garlic salt in a large bowl.
  2. Add chicken, black beans, green onions, bell peppers, cilantro, and lime juice to the bowl and mix well.
  3. Sprinkle cheese over tortillas, then add the chicken and rice mixture down the center.
  4. Fold the tortillas over the filling and press lightly to flatten.
  5. Heat a non-stick skillet over medium heat and spray with cooking spray.
  6. Cook wraps seam-side down until golden brown, about 2-4 minutes, then flip and cook the other side.
  7. Serve with optional toppings like sour cream and salsa.
