Spicy Southwest Chicken Wraps

raw boneless skinless chicken breast, cut into thin strips

canned black beans, drained and rinsed

The wrap

wedges of The Laughing Cow Queso Fresco & Chipotle cheese
Instructions
- 1. Coat chicken strips with Southwest seasoning in a Ziploc bag.
- 2. Heat 1 tsp of canola oil in a skillet over medium heat and cook chicken for 5-6 minutes until done.
- 3. Remove chicken and add remaining oil to the skillet, then cook corn and black beans for 1-2 minutes.
- 4. Add chopped tomatoes and squeeze lime juice over the mixture, then remove from heat.
- 5. Spread cheese down the center of each flatbread, then layer with chicken, corn mixture, and avocado.
- 6. Fold the flatbreads over the filling and roll them up tightly.
- 7. Slice in half if desired and serve.
