Spicy Southwest Chicken Wraps

Ingredients

The filling

  • 5 oz raw boneless skinless chicken breast, cut into thin strips
  • 1 tbsp Southwest seasoning
  • 1 ½ tsp canola oil, divided
  • ¼ cup frozen corn kernels, thawed
  • ¼ cup canned black beans, drained and rinsed
  • 4 count grape tomatoes, chopped
  • 1/8 count lime
  • ¼ count avocado, sliced

The wrap

  • 2 count Flatout Light Original Flatbreads
  • 2 count wedges of The Laughing Cow Queso Fresco & Chipotle cheese

Instructions

  1. 1. Coat chicken strips with Southwest seasoning in a Ziploc bag.
  2. 2. Heat 1 tsp of canola oil in a skillet over medium heat and cook chicken for 5-6 minutes until done.
  3. 3. Remove chicken and add remaining oil to the skillet, then cook corn and black beans for 1-2 minutes.
  4. 4. Add chopped tomatoes and squeeze lime juice over the mixture, then remove from heat.
  5. 5. Spread cheese down the center of each flatbread, then layer with chicken, corn mixture, and avocado.
  6. 6. Fold the flatbreads over the filling and roll them up tightly.
  7. 7. Slice in half if desired and serve.
